C-bun, Chocolate mix

The bake-proof chocolate drops are Callebaut dark chocolate.

With the C-Bunmix, the chocolate is processed before the Buns go into the oven. For this it is important to use bake-proof chocolate. Bake-proof chocolate will not melt or burn during baking.

Ingredients:

chocolate drops: sugar, cocoa mass, cocoa butter, emulsifier: SOY lecithin, natural vanilla flavor.

• 1 pack Bunmix of 360 g

• 25 g of butter in small pieces 

• 500 ml of warm water + 40°C
  (200 ml boiling + top up with cold. Be careful not to burn your hands!)

1 bowl or food processor, an oven or an airfryer

Preparation

Preheat your oven to 180°C - hot air 170°C - no need to preheat your airfryer.

Keep the chocolate aside and put the flour in a bowl. Add half of the water. Mix for a moment and add the rest of the water. Turn on your food processor to knead the mixture until you get a homogeneous mass, this happens automatically. Once the water is absorbed, add the pieces of butter while kneading.

Knead the dough for another 3 minutes or so until the dough looks elastic. Let the dough cool down for 10 minutes (this is necessary because otherwise the chocolate will melt and you won't have any pieces left in your Bun). Then add the chocolate drops. Mix again until well distributed in the dough.

Divide the dough into 10 equal portions (+ 90 grams), make balls of it with a hole in the centre the size of 2 cm, so that you get a doughnut shape. This shape gives the best baking results.

Put the buns in your oven and bake for 30-40 min depending on your oven (airfryer: bake in cake mode 160°C)

Let the buns cool on a rack before you cut them, that way they will not lose their lightness.
