Our Raisin–Walnut Bunmix is gluten-free, low-carb, and fully vegan. Packed with omega-3 fatty acids and antioxidants thanks to the walnut flour and walnut pieces — which also give the baked Buns their beautiful, slightly darker colour.

Walnuts are true multitaskers: full of fibre and plant-based protein that help you feel comfortably satisfied. The raisins add a touch of natural sweetness, while the crunchy walnuts and a hint of cinnamon create an irresistible balance between savoury and sweet.

Perfect for breakfast, as a snack, or — our personal favourite — on a cheeseboard (yes, even with vegan cheeses 😉).

And yes, despite the raisins, the mix remains low-carb: each bun (95 g dough, unbaked) contains only 3.1 g of natural sugars from raisins.

💡 Fun fact:
Walnuts are often called “food for the brain” — and for good reason. They support not only brain health but also gut health. With 4.6 g of fibre per 100 g, they promote digestion and contribute to a healthy gut. And with 16 g of plant-based protein per 100 g, they’re a worthy meat alternative too.

Set aside 180 g of dough (for 2 buns) and divide it into 8 small balls. Press them down to about 1 cm thick, bake them together with your Buns, and voilà — you’ve got cookies for your afternoon snack or a little hunger fix.

Raisins are actually dried grapes. They are dried in order to then store them longer. This is how raisins actually came to be. During drying, they turn slightly darker than the original grape. Large unsulfured raisins are used in the Bunmix, so you don't have to look for them in your bun.

Are raisins healthy?

Raisins can be eaten very well as a snack. Many people think that extra sugar is added to them because they taste quite sweet. This is incorrect because the grapes are only dehydrated and all the natural sugars are preserved. Although, too much of this delicacy is not good. It does, of course, contain calories. But an occasional handful of raisins can't hurt at all.

Walnuts are a source of energy and are rich in protein. As a result, walnuts contribute to muscle recovery and building. Walnuts also contain lots of good fats. Your body needs these fats and by nature they are not fatteners. By eating a handful of walnuts a day, you will enjoy all the benefits!

Ingredients

1 pack Bunmix of 380 g

25 g of butter in small pieces

500 ml of warm water + 40°C
(200 ml boiling + top up with cold. Be careful not to burn your hands!)

Equipment

1 bowl or food processor, an oven or an airfryer

Preparation

Preheat your oven to 180°C - hot air 170°C - no need to preheat your airfryer.

Put the entire Bunmix in a bowl and add half of the water. Mix for a moment and add the rest of the water. Turn on your food processor to knead the mixture until you get a homogeneous mass, this happens automatically. Once the water is absorbed, add the pieces of butter while kneading.

Knead the dough for another 3 minutes or so until the dough looks elastic.

Divide the dough into 10 equal portions (+ 90 grams), make balls of it with a hole in the centre the size of 2 cm, so that you get a doughnut shape. This shape gives the best baking results.

Put the buns in your oven and bake for 30-40 min depending on your oven (airfryer: bake in cake mode 160°C)

Let the buns cool on a rack before you cut them, that way they will not lose their lightness.

How to store your baked Buns:

On the counter, uncovered: keeps up to 2 days.

Properly sealed in the freezer: keeps up to 6 months after baking.

Take them out of the freezer whenever you need them.
Simply thaw at room temperature or heat for 3 minutes in the microwave.

Want that crunchy outer layer, just like freshly baked?
Pop them in the oven for 3 to 4 minutes at 170°C.
